Microlab 400 là thiết bị đồng hóa công nghiệp dùng cho kem, có lưu lượng 400 lít/giờ và áp suất vận hành 120 bar; các thông số kỹ thuật này cho phép thiết bị hoạt động ở cả chế độ "tuần hoàn" (dành cho quy trình sử dụng một máy thanh trùng) lẫn chế độ "nối tiếp" (dành cho quy trình sử dụng hai máy thanh trùng: thanh trùng ở máy thứ nhất và làm lạnh ở máy thứ hai).

Đặc tính
Hỗn hợp được hút vào bởi các piston bơm và được đẩy với áp suất cao (lên đến 120 bar đối với dòng Microlab 400) tới van đồng hóa. Khi đi qua van đồng hóa, các thành phần của sản phẩm trải qua quá trình phân tách thành kích thước siêu nhỏ (micron hóa) nhờ các tác động lực như: sự gia tốc đột ngột với vận tốc khoảng 9.300 cm/giây, hiện tượng xâm thực (cavitation) mạnh và ma sát giữa các hạt với nhau. Microlab 400 giúp tạo ra các hạt cầu béo có kích thước nhỏ hơn 3,5 µm (0,0035 mm). Quá trình micron hóa này giúp loại bỏ lớp màng bao phủ bề mặt các hạt cầu béo và làm tăng diện tích bề mặt tiếp xúc với chất nhũ hóa; nhờ đó, pha nước-dầu được ổn định, đồng thời mang lại cho kem kết cấu mềm mịn hơn cùng cảm giác "khô" (không bết dính) – những đặc điểm tạo nên chất lượng hảo hạng của kem.
